Bird Bird Biscuit for breakfast.

(I hope) Tacos will forever define Austin’s breakfast scene. You don’t have to slow down and enjoy them. For breakfast sandwiches, you do. Lately, breakfast sandwiches are knocking at the door of Austin’s kitchens, humbly inviting themselves in and then confidently lining up at the to-go windows for neighbors to snag, bag in one hand and dog leash in the other. 

I went to Bird Bird Biscuit on a mission to knock out an item on my bucket list without much thought put into the experience until I arrived. One thing that I often notice are peoples’ modes of transportation. A few people on foot, one man in his new Land Rover Defender, a couple with their dog barking from the window of their black sedan (seeming to ask for another whiff of bacon), and a line of four in front of me (10:15 AM). 

Within a minute, I was at the window giving my name to the chipper guy with a prompt delivery to follow. We had a friendly exchange, and I headed home. With the website, I’m now “that person” who takes photos of all food before and as I dive in. It’s my least favorite part of the job—being “that person”, but I don’t mind ending up with a well documented experience. 

Home—set them out on the cutting board in the sun, snapped a few photos and an awkward video (that you’ll never get to see) of me taking the first bite, and then heating them up a bit for the sit-down portion of the meal. I cut off a piece of both to share, and they stayed in tact, including a long string o cheese between ‘em. 

This is kind of biscuit that makes you grateful for alternative styles of breakfast. It had just enough crunch on the outside, not too flaky, and enough cushion to make it all blend as a sandwich. Biscuit reviews below. I’ll be back for lunch biscuits in the near future. 

Bird Bird Bacon | 8/10 | crispy bacon, organic egg over medium, cheddar and bacon-infused chipotle mayo on a handmade buttermilk biscuit | A heavy layer of cheese, egg that was politely upfront about its presence, and a chipotle mayo that differentiated the sandwich from what you expect from a bacon breakfast sandwich. 

Little Dipper | 9/10 | grilled cheese with mozzarella, cheddar, marinara dipping sauce on a handmade buttermilk biscuit | They call it a grilled cheese, I’m calling it a breakfast sandwich. Marinara, innocently sits in its portion cup waiting to make a statement. First bite was just the biscuit — mozzarella and cheddar melting out of the sides. It surpassed my expectations. Marinara added the sweetness that’s welcomed after the first completely savory bite

Many people can make a great grilled cheese. Few people can maintain that expected level of satisfaction with the addition of a biscuit with marinara. 

Side of Bacon | 10/10 | You ever met crispy bacon you didn’t like? Didn’t think so.

As I’m finishing these notes, I’m starting to feel the biscuit hit my chest. Time for a nap, or as my dad calls it, “a power nap”.
