Recipe | Tzatziki

Ingredients

1 cups grated cucumber

2 cups plain Greek yogurt

2 tablespoons extra-virgin olive oil

1 to 2 medium cloves garlic, minced, depending on how much you love garlic

1 tbsp lemon zest

1 tbsp chopped fresh mint

salt & pepper to taste

Directions

  1. Half the cucumber and clear seeds.

  2. Finely grate the cucumber, then spread on a paper towel. Cover with salt, leave for 10 minutes.

  3. Squeeze liquid from the cucumber.

  4. In a medium bowl, mix all ingredients.

  5. Refrigerate until cool.
